This is currently my favorite recipe - Thai Chili Chicken Meatballs with a spicy peanut sauce. It's flavorful, delicious, super easy to make, and it's husband approved! It takes just about 10 minutes to put together, 15 minutes to bake, and it only lasts about two days in our house. They are so scrumptious!
Originally, I found this recipe on SimplyGlutenFree.com, which is full of wonderful options for anyone who has celiac disease or a gluten sensitivity. After making these the first time, I tweaked a few things to better fit our taste buds.
SPICY PEANUT SAUCE
Preheat oven to 400 degrees.
In a blender or food processor, blend the crackers into fine crumbs.
Pour the crackers into a large mixing bowl and add the remaining ingredients. Mix thoroughly to combine.
Shape into small balls using about 1 or 2 tablespoons of mixture per ball and place on a baking sheet sprayed with non-stick cooking spray.
Bake for 15 minutes at 400 degrees or until the meatballs are browned.
SPICY PEANUT SAUCE
Combine all the ingredients in small mixing bowl and mix well.
If the sauce is lumpy, which is probably will be, microwave for about 10-20 seconds and stir until smooth.
Serve with the chicken meatballs. Enjoy!!

It's amazing how much life can change in just a week's time. On the second day of 2019, our lives changed forever when we met Asher. He has already had a tremendous impact and our hearts are so full. This list will no doubt grow much longer over the years, but in just seven days, here is a look at 10 things I've already learned since meeting our son.
1. Single moms are the real MVPs, I have absolutely no idea how you do it.
2. The nights are hard, but make the days so precious.
3. I can actually function on very little sleep...barely.
4. God gives grace for each and every moment. We don't have to have it all figured out.
5. Recovery postpartum is a real thing and takes time.
6. I never knew my capacity to love until now.
7. The enemy wants you to live in fear, trusting God is a hard lesson to learn.
8. Hormones are real and come with lots of tears. Cy it out, then be sure to treat yourself!
9. Secure that diaper tight or expect pee on everything. Ha!
10. It takes a village and I'm so thankful for mine.

Asher Bradley Santschi is here! He made his debut on January 2, 2019.
Asher and mom, Grace, are doing great. She and her husband are ecstatic to meet their happy and healthy son. They are so grateful to God for a safe and peaceful labor and delivery. Grandpa and Grandma Santschi are already in Nashville to meet their first grandchild and the rest of the family will get to meet this sweet little guy throughout the month. Everyone is so excited!

We recently visited Seattle, over a cold and rainy weekend, but we didn't let that slow us down. We discovered it was a fun city to explore rain or shine! This was a work trip for my husband, so we had limited time to see the city, but we made the most of it.
If you're headed to Seattle anytime soon, here's some of the places we hit and enjoyed!
This is an obvious stop, but a must-do! Whenever we are traveling to a new city, we like to spilt our time between super touristy spots and places the locals hang out. This touristy spot provides some gorgeous views, along with the history of the city and how the needle was constructed.
Tip: Bundle up (you'll be glad you did!) and go before noon and you'll save $10.

Pike's Place Market
Another hot spot and tourist destination! It's the market of all markets. There is plenty to do and see as you stroll through this nine acre market place - try local foods, explore the historic district, visit with local artists, watch the fishmongers at Pikes Place Fish Market shout orders and throw fish to each other, shop antiques and much more. I think we explored at least four floors of shops and it's all impressive! Plus, the original Starbucks is located right on the corner outside of the market.

This was such an interesting stop. There are only two Starbucks Reserve Roastery and Tasting Rooms in the country - this one in Seattle, another in New York and they are currently building one in Chicago. This one is just nine blocks from the original Starbucks at Pike's Place and this 4,000 square foot store showcases the entire coffee making process. You can watch the coffee beans roasting, taste rare Starbucks Reserve brews and specialty drinks, take the stairs in the library to the overlook to watch the entire production. It's a very unique and interesting experience.

During this quick trip, we were able to meet up with my aunt and uncle who have lived in the Seattle area for many years, so they were our tour guides for an evening! We drove over the long bridge from downtown to Bellevue just as the sun was setting, which made the landscape even more beautiful.
We were having so much fun catching up, I hardly took any photos. We grabbed drinks at JOEY Bellevue, before heading to the botanical garden to see their Christmas light display! For dinner, we went to Serafina (more on that below) before driving back over the bridge and through the beautiful downtown area. They were wonderful tour guides, driving us through all the hot spots and sharing the history of the city. Such a fun night exploring!
Tilkum Place Cafe
We stumbled upon this place through Yelp since it's close to the Space Needle, which was our next stop. The coffee was incredible, the food was equally delightful and they were very accommodating and switched out the sides for us.

Brave Horse Tavern
This was a fantastic brunch spot! They had shuffle board, darts, plenty of TVs to watch the football games, and great, efficient service. To start, I ordered my favorite, a spicy bloody Mary and it came with a short local brew too - both were delicious! For an entree, I chose the Smoked Brisket Hash, which was "smoked brisket, sweet onion, pickled peppers, house ketchup, breakfast potatoes, two eggs." Absolutely phenomenal.

This is a quaint little Italian restaurant located in the Bellevue area. My aunt and uncle took us here during our trip to the east side of Seattle and it did not disappoint! On the left was my entree, one of the specials described as, "braised beef short rib, baby potato confit, cipollini agrodolce, haricot vert, red wine jus, gremolata." It was superb. I didn't snap of photo of everything, so the one on the right is from Yelp, but it's what my husband ordered. He had the Rigatoni Bolognese, which was "anderson ranch lamb, fennel sausage, marjoram, pecorino."

These are super delicious treats! They are dairy and gluten free, and a "healthier" version of a chocolate peanut butter cup. It takes no time at all to make and all you need are four ingredients and cupcake liners.
Once the timer goes off, they are ready to enjoy! Be sure to store them in an air tight container or sealed bag in the refrigerator.
This recipe is so simple and is a wonderful treat for everyone and those with dietary restrictions. I originally found the recipe here and will definitely be making them again. Yum!

Christmas! It's the most wonderful time of the year!
But, if you are anything like me, the thought of shopping for the men in your life can cause lots of frustration. It's so much more challenging than shopping for the ladies.
BUT, I'm here to help! I've taken the liberty of gathering some great gift ideas for the men and hopefully it will help save you a lot of time!
1. The Instant Pot
If you know, you know. I have talked to so many men who absolutely love this little kitchen appliance. It's a great time saver and allows them to cook meat in very little time and with very little effort. My husband LOVES his and has been gawking over it since it arrived. This nifty little gadget starts at about $80, which is a STEAL for such an awesome gift.
2. Shower Beer Holder
This would make a great stocking stuffer AND who doesn't love a beer in the shower every now and then? I love it for those long summer days spent working in the yard. It truly is one of the best ways to relax!
3. Iphone Wireless Charger
I love the idea of a wireless charger. No more searching for missing cords. Novel idea! This just makes life so much easier and simpler. I think any guy would absolutely love this!
4. Night Runner Headlights
If your man loves to run, chances are his winter run times have had to be adjusted with the time change. I love the idea of these runner headlights for added safety when the days get shorter.
5. Whiskey Chillers
My husband loves a good glass of whiskey. The key to a good glass is a great chiller (so I've heard). I love these golf ball chillers. Your man will impress his friends every time he offers them a glass of whiskey on the rocks.
6. Leather Briefcase
If you really want to give a gift that will impress your man, get him a good leather briefcase. It will stand the test of time and your hardworking man will carry it with pride!

Ok, I think this is one of the coolest inventions ever. My husband is always using the foam roller and I know he has moments when he is not near it that he could really use one. This is the perfect size and is also used as a water bottle! So cool!
8. Craft Cocktail Infusion Kit
I'm not going to lie, I have always wanted to try my hand at cocktail infusions. My husband loves making cocktails so this would be a really fun gift for him.
9. Traveler's Journal
Love to travel? This journal is perfect for documenting trips, best places to eat, sites to see, etc. It's a fun way to keep memories and be able to look back and share your travel tips with friends as well!
10. Men's Robe
I can't believe I'm finally at the age where ROBES are the bomb! I think everyone needs a great robe for home life. They are especially nice in the winter when it's chilly. Christmas is just around the corner! Can you believe it's just 19 days away already?
It's my favorite time of year, plus it's snowing in Kansas City so it's a beautiful winter wonderland right now. Just in time for the holidays! Yay!

I wear my slippers, or house shoes as some call them, every single day. Right when I walk in the door, I kick off my work shoes and instantly throw on these warm and comfortable slippers! Happy (almost!) Thanksgiving everyone! I can't believe it’s THIS week! One of my favorite things to do in prep for a holiday, is to find an outfit inspo to try and replicate it in my own way.
Today, I'm sharing three Thanksgiving Day outfit inspirations with my own little twist. I hope this helps you as you are deciding what to wear on Thanksgiving day! I should also add that all of these outfits can comfortably grow with you after the big meal ;)

Hi friends! Today's post is very personal for me. I'm sharing specifically what I am praying for Asher.
I've had a lot of people ask me what I have loved most about pregnancy, and the truth is I've loved how it has influenced my walk with the Lord. Don't get me wrong, I love feeling him kick and move around, but my time with the Lord has gotten even sweeter. Maybe it's because I'm realizing that once Asher is here, my uninterrupted time in the word will pretty much be non-existent.
There's also a lot of worry that comes with pregnancy. Instead of giving into my fears and concerns though, I try to immediately pray and cast my cares on Him. As you can imagine, my prayer life has exploded in the past few months!
So here's what I am praying for our little man. I hope it gives you a look into my heart for him!
First and foremost I pray every morning that Asher will have spiritual and physical strength and health. The most important thing to me is that Asher knows who God is AND what his identity in Christ is. It's important to me that he is not just strong in his faith, but also has a healthy view and relationship with God.
Growing up in the Bible Belt, it's easy to know all the right answers and have the head knowledge, but I don't want it to stop there for Asher. I want him to experience a healthy and thriving relationship with God and to walk in that all the days of his life.
One of the fears you have as a mother is your child's health and strength. When I found out I was pregnant, I immediately thought about Asher's health and how long the Lord would give him on this earth. So I started to pray for physical health and strength.
Why worry when you can pray, right? I also started praying this prayer because the blessing over the Tribe of Asher in Deuteronomy mentions strength. It's important to me to pray this specific blessing over Asher and that he walks in the fullness of his name.
I also pray that Asher is happy and knows how blessed he is. His name quite literally means happy or blessed, and I pray that he is a testimony of the happiness and blessings we receive when we walk with the Lord.
We live in such a broken world, that happiness, joy, blessings, etc. seem hard to recognize some days. I pray that Asher shines his light into every dark corner and that people are drawn to the Lord because of his happiness and joy.
Some other things I've been praying for Asher that seem basic, but again, why worry when you can pray, are....
- Safe and healthy delivery
- For our doctor and nurses
- For my hubby (hospitals make him queasy!)
- No colic (seriously have been scared for this ha!)
- That I would be able to breastfeed and supply enough milk for him
- A good sleep schedule
The list could go on and on, and so I continue to pray when I'm confronted with worry. If you are a soon-to-be momma and find yourself struggling with worry, please take this as an encouragement from me to start praying. I believe that the enemy wants to rob our joy and fill our hearts and minds with fear. However, perfect love casts out fear. So press into Jesus when you are worried or scared. He cares for us and wants to meet all of our needs, we just have to ask!
I keep a prayer journal so I can clearly express my thoughts and one day look back on all the ways God answered my prayers. It's such a cool thing to be able to do! Start today ... it’s never too late.
